MOIST BANANA BREAD RECIPE

It’s the coldest first day of winter in Melbourne in 77 years according to the weatherman. Yes, we have winter in June. So we live on cozy knitted socks and a hot cup of tea while on the other side of the world, people are basking under the sun as summer season commences. We have decided to share our go to recipe for an easy moist banana bread that you can whip up anytime. We have heaps of bananas in the kitchen counter as our kids love them. For this recipe, we recommend using overly ripe bananas for a sweeter flavor and moister texture. You can enjoy it with a hot cup of afternoon tea or simply an easy breakfast on the go.

INGREDIENTS:

1/2 cup butter,softened

1/2 cup sugar

2 eggs

1 teaspoon vanilla extract (optional)

3 mashed bananas

1/2 cup buttermilk/sourmilk

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped nuts/chia seeds (optional)

INSTRUCTIONS:

  1. Preheat oven to 150 degrees Celsius for at least 15 minutes.
  2. Cream the butter and sugar.
  3. Add the wet ingredients (eggs, sour milk/buttermilk,vanilla,mashed bananas) and continue mixing.
  4. Add dry ingredients to creamed mixture,mix thoroughly.
  5. Transfer to a loaf pan lined with parchment paper.
  6. Bake for 50 minutes or until the cake tester (bamboo skewer/wooden toothpick) comes out clean.

Tips: Check the bread every 5 minutes after 25 minutes without opening the oven
